"Nicola Gatta" is a winery located in the easternmost part of Franciacorta, 400 meters above sea level. The conformation of the soil of the hills where the vineyards are located is calcareous, which gives its products a marked minerality. In the vineyard, Nicola follows the principles of biodynamic agriculture; only spontaneous fermentations without filtration and clarification and also never adds exogenous sulfur dioxide. This winery has 6 hectares planted only with Chardonnay and Pinot Noir, the two most important grape varieties in the Franciacorta landscape. This Rosé de Noirs is a rosé bubble obtained only from Pinot Noir grapes, in the glass it has an extremely fine and persistent bubble. The crunchiness of small red fruits such as currants and raspberries are combined with the complexity given by aging on the lees, with notes of brioche bread and butter. A perfect match for fish dishes, both raw and cooked, seafood or fresh cheeses.
