"Nicola Gatta" is a winery located in the easternmost part of Franciacorta, 400 meters above sea level. The conformation of the soil of the hills where the vineyards are located is calcareous, which gives its products a marked minerality. In the vineyard, Nicola follows the principles of biodynamic agriculture; only spontaneous fermentations without filtration and clarification and also never adds exogenous sulfur dioxide. This winery has 6 hectares planted only with Chardonnay and Pinot Noir, the two most important grape varieties in the Franciacorta landscape. This Blanc de Noirs comes from Pinot Noir grapes only, which rests on the lees for 70 months, in the glass it has a deep yellow color. The nose is extremely complex, hints of white-fleshed fruit and citrus fruits then give way to notes of pastry with hints of dried fruit. It finds its perfect match with fish-based appetizers, both cooked and raw, shellfish or vegetable dishes.
